Cost Controller – Food & Beverage (Pre‑Opening)

About the role

Fairmont Southampton is seeking a Cost Controller to lead Food & Beverage cost control and inventory management during the resort’s pre‑opening phase and ongoing operations. Reporting to the Director of Finance & Business Support, you will work closely with the Purchasing Department and F&B leadership to build robust systems from the ground up.

Key responsibilities

• Assist in the setup and configuration of inventory and procurement systems, including GAIA and BirchStreet.
• Develop and document inventory procedures for Food & Beverage and operating supplies.
• Support the implementation of cost‑control processes within hotel software platforms.
• Establish receiving, stock‑control, and reporting mechanisms to ensure accurate inventory tracking.
• Collaborate with Finance, Purchasing, and F&B teams to monitor cost performance and provide actionable insights.

Required profile

• Proven experience in cost control and inventory management, preferably within Food & Beverage operations.
• Familiarity with hotel pre‑opening environments and multi‑outlet resort settings.
• Strong analytical mindset and ability to develop procedures and documentation.
