Pastry Sous Chef – Luxury Resort

About the role

We are seeking a talented Pastry Sous Chef to join the award‑winning team at Fairmont Southampton, Bermuda’s largest resort. Reporting to the Executive Pastry Chef, you will help lead the pastry department across multiple outlets, ensuring every dessert meets the brand’s luxury standards.

Key responsibilities

• Assist the Executive Pastry Chef in daily operations and staff supervision.
• Oversee pastry production and service during assigned shifts, maintaining consistency, quality and timely execution.
• Support pastry operations for restaurants, banquets, in‑room dining, specialty outlets and special events.
• Ensure product quality, flavor, presentation and portion control meet Fairmont and Accor standards.
• Maintain knowledge of all pastry menus, seasonal offerings and promotions.
• Contribute to cost control, inventory management and waste reduction.

Required profile

• Proven experience in a high‑volume, luxury hotel or resort pastry environment.
• Strong leadership and team‑development abilities.
• Commitment to upholding high standards of hygiene and safety.
• Flexibility to work varied shifts, including weekends and holidays.
