Shift Building Operator – Kitchen & Refrigeration Systems

About the role

The Shift Building Operator – Kitchen & Refrigeration Systems ensures the safe, efficient operation and maintenance of Fairmont Southampton’s commercial kitchen and refrigeration equipment during assigned shifts. Reporting to the Director of Engineering & Facility Operations, you will keep food‑service areas running smoothly while upholding safety, hygiene and performance standards.

Key responsibilities

• Conduct daily inspections and walkthroughs of kitchen, refrigeration and plant areas.
• Operate, maintain, troubleshoot and repair commercial kitchen equipment such as ovens, fryers, dishwashers, grills and steamers.
• Inspect, service and repair refrigeration systems including walk‑in coolers, freezers, ice machines and cold‑storage units.
• Perform preventive maintenance to minimise downtime and ensure reliable operation.
• Respond promptly to emergency breakdowns and provide timely repairs.
• Maintain accurate maintenance logs and compliance records.

Required profile

• Experience working with commercial kitchen and refrigeration equipment in a hospitality environment.
• Strong mechanical aptitude and ability to diagnose equipment issues.
• Commitment to safety, hygiene and quality standards.
• Flexibility to work rotating shifts, including nights and weekends.

Required skills

• Operation and repair of ovens, fryers, dishwashers, grills and steamers.
• Maintenance of walk‑in coolers, freezers, ice machines and cold‑storage equipment.
• Preventive maintenance planning and execution.
