Assistant Director – Food & Beverage

About the role

The Assistant Director, Food & Beverage will support the Director in leading the day‑to‑day operations of Fairmont Southampton’s diverse food and beverage outlets. This role is central to delivering the high‑end guest experience expected at a luxury resort after a multi‑million‑dollar renovation.

Key responsibilities

• Oversee daily operations across restaurants, bars, banquet facilities and special events, ensuring alignment with Fairmont standards.
• Collaborate with culinary and beverage teams on menu execution, service delivery and product quality.
• Monitor inventory, waste reduction and portion control to drive operational efficiency.
• Assist in scheduling and staffing to provide optimal coverage during peak periods.
• Maintain a strong on‑floor presence, managing service flow and engaging with guests during key meal periods.
• Partner with the Culinary and Beverage departments to implement approved menus, service styles and product standards.

Required profile

• Proven leadership experience in a luxury resort or high‑end hotel food and beverage environment.
• Hands‑on hospitality professional with a passion for exceptional guest experiences.
• Strong interpersonal skills to engage colleagues and guests alike.
• Ability to work flexible hours, including evenings, weekends and holidays as required.
