Senior Chef de Partie

About the role

We are looking for a Senior Chef de Partie to join Fairmont Southampton, Bermuda’s largest resort. Reporting to the Sous Chef, you will lead culinary operations across multiple stations, ensuring world‑class dining experiences for our guests.

Key responsibilities

• Lead execution of à la carte, buffet and specialty menus across several kitchen stations, maintaining consistent quality and presentation.
• Oversee mise en place, station set‑up and breakdown to guarantee operational readiness during service.
• Monitor product rotation, minimise waste and manage section inventory with cost efficiency.
• Operate and maintain kitchen equipment safely, reporting any malfunctions and supporting preventative maintenance.
• Contribute to menu development, specials and seasonal offerings, delivering creative culinary experiences.
• Ensure allergen awareness and compliance with food safety standards.
• Supervise and mentor junior kitchen staff, fostering a high‑performing team.

Required profile

• Proven experience in a senior kitchen role, preferably as Chef de Partie.
• Ability to lead multiple stations and support other resort kitchens as needed.
• Strong knowledge of food safety, hygiene and allergen protocols.
• Excellent organisational skills and attention to detail.
