Assistant Chief Steward (Luxury Resort)

About the role

We are seeking an Assistant Chief Steward to support the Executive Chief Steward in overseeing the stewarding operations at Fairmont Southampton, a luxury resort in Bermuda. The role ensures cleanliness, sanitation and operational readiness across all food‑and‑beverage venues.

Key responsibilities

• Assist in daily stewarding operations, ensuring dishware, glassware, silverware and equipment are cleaned, sanitized and stored to Fairmont standards.
• Support hygiene compliance with HACCP, local regulations and Accor/Fairmont policies, conducting regular inspections of kitchens and back‑of‑house areas.
• Coordinate setup and breakdown for banquets, beach events and conferences, working closely with Culinary, Banquets and F&B teams.
• Manage inventory of stewarding supplies, chemicals and equipment, submit requisitions and track usage to control costs.
• Supervise and coach stewarding staff during shifts, handle scheduling, attendance and on‑the‑job training.

Required profile

• 3‑5 years experience in stewarding or kitchen operations, preferably in a luxury hotel or resort.
• Previous supervisory or lead‑steward experience.
• High school diploma required; hospitality or food‑service certification (ServSafe or equivalent) preferred.
• Knowledge of HACCP, food safety regulations and chemical handling.

Required skills

• Proficiency with Microsoft Office.
• Experience using inventory management systems.
• Food safety and sanitation certification (e.g., ServSafe).
