Junior Sous Chef

About the role

Hamilton Princess & Beach Club, Bermuda's only luxury urban resort, is hiring a Junior Sous Chef. The role reports to the Chef de Cuisine and Sous Chef and covers kitchen operations, menu development, inventory control and team leadership.

Key responsibilities

• Provide professional, proactive guest service and uphold the Fairmont Service Promise
• Control the flow of food orders, ensure dishes are cooked and plated correctly and on time, and adapt to groups and events announced in pre-shift meetings
• Develop menus, propose content, cost, write recipes and production lists, and order food when senior management is absent
• Maintain inventory to maximise quality and minimise food cost, and integrate kitchen operations with front-of-house managers
• Manage staff schedules and motivate, coach and lead team members
• Keep the kitchen clean and safe, follow health department guidelines, train staff and manage stewarding staff
• Report maintenance needs, comply with policies and participate in hotel committees

Required profile

• Documented culinary training and certification (Red Seal or equivalent) strongly preferred
• 5 years of general culinary experience in a luxury hotel or high-quality restaurant (Michelin-star equivalent) strongly preferred
• At least 3 years of international experience preferred
• Previous supervisory or management experience strongly preferred
• Ability to set high standards of food presentation and quality
• Willingness to work extended hours
