Senior Chef de Partie (General/Pastry/Butcher)

About the role

Hilton Hamilton Princess & Beach Club, Bermuda's only luxury urban resort, is hiring a Senior Chef de Partie (general, pastry or butcher) reporting to the Restaurant Sous Chef. The role covers food preparation, guest service, cost control and, for the butcher, daily meat, fish and poultry handling.

Key responsibilities

• Provide professional, proactive guest service and treat every guest as an individual
• Keep food consistent with hotel recipes and standards, improving presentation with the Executive Pastry Chef
• Anticipate guest needs, resolve problems and act as an ambassador for the brand, hotel, community and colleagues
• Maintain food cost by minimizing waste and labour cost by using labour productively
• Assist the Sous Chef with menu creation, monitor equipment and report irregularities
• Follow safety and sanitation codes and supervise the department when the Sous Chef is absent
• Butcher: complete daily meat, fish and poultry market lists, rotate items between outlets, liaise with the Director of Purchasing on quality-for-price, keep red meat inventory for proper aging and follow health and safety guidelines

Required profile

• At least 3 years of general culinary experience in a luxury hotel; international experience preferred
• Culinary certification (Red Seal or equivalent) strongly preferred
• Ability to work in a physically demanding environment, standing all shift and lifting up to 25 kg
• Willingness to work shifts, extended hours, evenings, weekends and public holidays
