Cost Controller

About the role

The Cost Controller will join Fairmont Southampton’s finance team, reporting to the Director of Finance & Business Support. The role focuses on establishing and maintaining cost control and inventory systems for Food & Beverage during the pre‑opening phase and ongoing operations.

Key responsibilities

• Assist in configuring inventory and procurement systems such as GAIA and BirchStreet, and develop related procedures.
• Monitor and analyse Food & Beverage costs, prepare cost reports, and investigate variances against budget.
• Establish and supervise regular inventory counts, maintain accurate records, and manage stock rotation.
• Support purchasing compliance by verifying goods receipt, monitoring supplier pricing, and ensuring proper documentation.

Required profile

• Degree or diploma in Accounting, Finance, Supply Chain Management or Hospitality Management (preferred).
• 3–5 years of cost control, inventory or purchasing experience, preferably in a hotel or multi‑outlet Food & Beverage environment.
• Strong analytical, organizational and communication skills.

Required skills

• Advanced Microsoft Excel.
• Experience with GAIA inventory system.
• Experience with BirchStreet procurement system.
