Head Chef (Luxury Resort)

About the role

Fairmont Southampton is seeking a Head Chef to lead all kitchen operations across its nine restaurants, banquet facilities and special events. This hands‑on leadership position requires culinary excellence, strong financial acumen and the ability to inspire a high‑performing team in a luxury resort environment.

Key responsibilities

• Direct daily kitchen operations for all outlets, ensuring consistent quality, food safety and guest satisfaction.
• Develop and implement innovative menus that reflect market trends, local cuisine and brand standards.
• Manage budgeting, cost control, inventory, waste reduction and portion control to meet financial targets.
• Lead recruitment, onboarding, training and performance management for culinary staff, including the Culinary Apprenticeship Programme.
• Ensure compliance with HACCP, health‑and‑safety regulations and preventative equipment maintenance.

Required profile

• Minimum 7 years progressive culinary experience, with at least 2 years in a senior leadership role in a luxury hotel or resort.
• Proven track record managing high‑volume, multi‑outlet operations and large‑scale events.
• Strong organizational, leadership and communication skills aligned with Fairmont’s values of respect, belonging, integrity, empowerment and excellence.
