Stewarding & Set-Up Attendant

About the role

Fairmont Southampton, Bermuda's largest resort, is looking for a Stewarding & Set-Up Attendant to report to the Executive Chief Steward. The role keeps food and beverage areas clean, organized and properly set up, covering kitchens, restaurants, banqueting and event spaces, beach venues and back-of-house areas. It supports culinary and banqueting teams so that equipment, venues and service areas meet hygiene, safety and presentation standards.

Key responsibilities

• Clean, sanitize and maintain kitchen areas, including dishwashing and pot-washing, sinks, floors and food preparation equipment
• Operate and maintain dishwashers and pot-washers according to safety guidelines
• Wash, polish and store dishes, silverware, glassware and kitchen equipment
• Maintain washrooms associated with food and beverage operations
• Set up restaurants before, during and after service, and support banquet, catering and event setups
• Assist with beach function setups and collect, clean and store equipment after service
• Sort and dispose of waste correctly and rotate products to reduce waste and spoilage
• Store cleaning chemicals safely and follow health, safety and food hygiene procedures
• Replenish supplies, help with outdoor venue upkeep such as watering flower beds, and assist other F&B teams

Required profile

• At least 2 years' experience in stewarding, kitchen support, public area cleaning or setup operations; luxury hotel or resort experience is an asset
• High school diploma or equivalent preferred
• Food safety or hygiene certification is an asset, or willingness to obtain one
• Ability to lift, push, pull and carry equipment, and to work varied shifts including early mornings, evenings, weekends and holidays

Required skills

• Understanding of cleaning techniques, sanitation and food safety standards
• Ability to operate dishwashing and cleaning equipment safely
• Strong organization, attention to detail and ability to work quickly in a fast-paced environment
